Hi, I’m Bilal — management consultant turned cheesecake maker. crème started as a pandemic baking experiment, but one dessert kept calling me back: the Basque-style cheesecake. This rustic Spanish dessert is a study in contrast, and something about the caramelized, almost burnt, exterior giving way to that silky, custard-like center just clicked.


Friends and family couldn’t get enough, so earlier this year (Feb 2025), I decided to perfect the recipe in a commercial kitchen, bringing outrageously creamy cheesecakes to weekly drops, farmers markets, pop-ups, and café menus. Every cake is made in small batches here in Plymouth, MN, using high-quality ingredients and naturally gluten-free recipes. They’re made for moments worth savoring — whether that’s a gathering, a gift, or a quiet evening just for you.
